Oh, baby, baby, it’s a wild world.

1st part:Backtracking time,babies ๐Ÿ™‚ Happenings last week were too awesome! There are so much to be grateful for and I couldn’t afford to leave out one of the best weeks (by far) this 2011.

2.11.11 – Compre Practicals

Okay,before you panic andย get grossed out.. this happened last year (October 2010). I just love how this picture reminds me of how Culinary School molded me into a better human being.

You see, I am just your average student. I am the fat kid that they bullied in grade school,the highschool girl that was sent out of her Math Class cause she rather talk to this boy than let her mind explode because of that Algebra Formula (why find x anyway if you could ask y?) and the girl who shifted from Commerce to Culinary in College.

If I’m lazy,its either I get an average score or I flunk (mind you that I still manage to keep my distance from that red pen at the end of the term). I like being challenged. In high school I would often tell myself, I want to be in a school wherein I am graded not only because of a paper and what I wrote with my pen. However,we don’t get everything that we want and need in an instant. Sometimes, life takes an alternate route for us to learn, and most of the time to prepare us for something great.

It took me 2 years to reach to that beautiful road that God engineered for me. I’m sure He heard me say “I don’t want to be classmates with teens who are barely legal when I’m 25”.

Culinary School wasn’t easy. I hate the notion of some people that we go to school and “just cook” so there’s really no education in there. First,WE COOK we don’t “just cook”. We cook with our soul,not only with our eyes but with our soul.We may serve you eggs during breakfast,but I’m sure we could provide you eggs that are cooked in different ways everyday in a week.Second,Culinary is education. We don’t just get education by the book, we get it first hand,in our palms..we are educated through experience, experience that even your thickest book in Biology can’t even explain. So just imagine my dismay when someone called me “Kusinera”. Noย judgementย to kusineras, but hey! I am working my A off to earn that 4 letter word before my name (and I know it would take me probably a decade to be worthy of that).I am struggling to reach to Level 10 and you call me a Kusinera? That instance really motivated me to finish this and prove to them that Culinary School is not just about opening your stove and heating a pan.Culinary is more than that.

We are created equally, and it’s up to us if we would want to be left behind no matter what your chosen field is,we will all struggle not to be left behind and make the most out of our greatest reward – life. When I entered Culinary School ,all I can hear from the people around me was “You will surely get FAT, and COOK for us”. Amongst the two,there is only one that I managed to attain immediately..gaining weight and being fat. I remember, I couldn’t even touch a raw chicken,that my friend Nikki had to get one for me from the crate,but after a few inhales and exhales, I finally stabbed that pinkish flesh and massacred it with my newly honed knife..but now, I want to fabricate every raw chicken on our fridge.

I don’t have beautiful hands, I admit. There are days that I would look like I am brutally harassed by my boyfriend due to cuts and burns. But I did not mind all of that, okay fine I did..knife cuts are torture(I hate blood), and burns are evil. In Culinary School, we call those marks as “battle scars”. I like having them (goodbye to my aspiration of having a flawless skin). My BS are my constant reminder of how I worked hard to be exactly where I want to be, that at the end of the day everything is still up to me.

Most students would probably review with piles of papers on their desk while sipping a cup of coffee in Starbucks. In our school, we review by practicing in the kitchen, wishing that there’s an aircon beside us,hoping that we won’t run out of cold water to drink and longing to sit after standing up for 6 hours without having to even rest for 5 minutes. When we walk out of the kitchen, we would probably smell like a walking meat or most of the time onion,and we usually look like we just jogged for an hour.

Everything will finally pay off when you see that 6 letter word beside your name on that bulletin board outside the Programs’ office. 8 dreadful levels then Compre. Ha! COMPRE. I’ve been so nervous about it since Level 5! Hearing those stories about some students retaking the practicals for the 3rd time is quite nerve-racking already,but having to enroll yourself in Culinary School again and do the basics for the second time is excruciating. So just imagine our fear when it is our time already. Nobody wants to get that F word beside their name, but all of us must wade through to get that 6 letter word..PASSED.

2.11.11 – Hello Compre! After weeks of practicing,you are finally here.I couldn’t sleep the night before Compre, I’ve been telling myself for weeks that I want it to be over already, but I don’t know how. I am uncertain if I’ll pass or not,I don’t know if I practiced enough,all I know is went to school that morning unprepared,despite the fact that I brought in 2 enormous “orocans” (hahaha) and a bag of tools! I wanted to pick Asian, I’ve prepared everything for Asian! But again, God lead me to an alternate route, he gave me European instead. I wanted to die the moment I saw the word “Spanakopita”! I was like “WTeFFF!” my plates are for Asian, I only made an “ey-pee” for Asian,I WANT ASIAN..”I’M SCREWED”. I just told myself that,God brought me to this situation cause he knows I CAN. I do not know how I got through it. All I know was,while I was cooking I’ve been telling myself that this is the moment that I prayed for,the feeling that I’ve always wanted,to feel the capital G. And so I did,being able to pass those 3 plates,having to enter the room with 6 Professional Chefs,standing there hoping to hear the word “pass” without minding if its low or not..definitely made me feel the thing that I’ve been praying for.

I went out of the deliberation room with the hugest smile ever! I did it. I PASSED. Yaaaay. (OMG I am still hyped just thinking about it). I made it through,now I’m a “free B baby” (Tumblr?) HAHAHA. Anyway, I immediately texted my parents, the 2 treasures that I wanted to be proud of me,the best support system ever and the people who never failed to remind me that I am going to be great. I passed the most important exam in my 20 years of existence.

Daddy picked me up from school, upon entering the car congratulated me with the sweetest Daddy smile ever. He told me that he nearly cried when he read my message (awww Daddy. I am so glad I made you happy) and to break the senti mood,he jokingly said,he saved the message cause it was pure english :)) Well, my Dad saves all of my letters,even the simple notes such as “thank you Daddy”. He wanted to celebrate, but I opted to just go home and rest, since I only slept for 3 hours. My Mom greeted me and congratulated me with her most “kikay” voice. I FELT LOVED,and I repeat, I am so glad that I made my parents happy. This is not only for me,this is for them as well.

I rewarded myself with these. Ooooh,hello fatty Ia!! But hey, its been months since I last indulged myself in junk..and that day was an exception. Anyway, I had to go to SMX to support my forever love,Eldrin and his partner Eden and of course, CCA ๐Ÿ™‚ I love riding the car with my parents, us 3, with a fruitful conversation is just so priceless. But that was no ordinary ride, my Dad keeps on congratulating me every 5 minutes! And I find it so adorable, making my Dad proud is one of my greatest achievements in life,hearing him say he is lucky to have me made me realize that I should be the one telling him that. I am fortunate to have such wonderful parents who believed in me, when everybody else thought that I’ll just waste my Dad’s moolah in Culinary School. they believed me when I told them “this is what I really want to do”.

After SMX. Parents,Chella and I headed to Quiapo Church. We have so much to be gratified about, but my Dad pointed out that for that week, its me passing my Compre was the greatest blessing. ๐Ÿ™‚ Seeing my Dad tearing up beside me inside the church really overwhelmed me, we go to church together for 20 years, but I have never seen him with such joy and tears.

Above all, I thank God for rewarding me with all of these. I wouldn’t have done it without Him. He was my main source of strength and hope.

Time to make my parents a letter before this month ends! Ha! ๐Ÿ™‚


A 3 course meal for 60PHP

..sounds dubious I know,but CCA made it possible for all of us.

We had lunch in Andale today, a Latin-American-Pinoy Breakfast and Lunch Operation regulated by aspiring professional Chefs of CCA. Upon entering Andale’s 20 seater abode, you could already feel the festive vibes from the colorful interiors,jocund background music and eye-catching uniform of the servers.

Andale’s menu changes everyday. Again, for 60PHP..with a menu like that,it is enough to feed your appetite and curiosity.

Cheese N Salsa Nachos for Appetizer.

Their amiable server was kind enough to give me some additional cheese.

It was a battle between Breakfast Burrito and Menudo Tacos. I opted for Breakfast Burrito since their Sisig Tostada yesterday was piquant! We really ate our heart out on that one.

This gratifying burrito is filled with ham,eggs,black legumes and RICE! Yes, RICE. With he portion size,I think this one’s good for sharing.

It is accompanied with salsa and roastedย jalapeรฑos.

Fresh Melon Shake for 20PHP

Churros con Chocolate for dessert. A light dessert with a heavenly taste. If I only I could request for a round 2… :))

Anyway, all in all it was a fun lunch time with my favorite people. Andale is really worth visiting! For 60PHP, you might even come out rolling! And where else could you find a 60PHP 3 course meal prepared by skilled Chef aspirants in the Metro?

home baked bread with aged balsamic vinegar and virgin olive oil

I love home baked breads! Freshness,crisp and softness of the bread — are the factors that makes me go for a round 2..and 3,fine 4! :))

I prefer having balsamic vinegar and olive oil as an accompaniment to my bread instead of butter.The 12 million calories that I get from the butter — gahd. I just love how the tartness of the balsamic vinegar goes perfectly with a simple home baked bread.

I have never eaten so much salad overnight! This was the start. We ordered an additional feta cheese since we are not really a salad fan(but I’m trying to be for the past 2 months HAHA). But I must say, the Calamata Olive Vinigraitte made me finish my salad! ๐Ÿ™‚ Yum

Salmon and Seabass chowder with cured Italian pork & Asparagus

OMG! I have no words for this chowder! Its a masterpiece. ๐Ÿ™‚

Hahaha! Gaaahd! I was happy though because I was able to answer the questions!! Thank God I studied!! Really! ๐Ÿ™‚ Thank you for guiding me ๐Ÿ™‚

After the exam, I texted my Dad asking him if we could go to church. Its the Friday habit once again ๐Ÿ™‚

Daddy and I picked up my sister Chella from school then headed to Quiapo ๐Ÿ™‚

Daddy would usually bring us to that perennial “hot-choco” house (we call it ze haaat choco – haha) And I swear, I’d rather order that 75PHP hot choco than go to Starbucks :)). My Dad, is such a food lover (no wonder I am too). There are days that he would bring us to this small carenderia just to eat a home made adobo or to this luxurious restaurant and let my brother suffocate himself by over eating. :)) He lets us try all the things that life has to offer ๐Ÿ™‚

After our haaat choco adventure, we then headed to the church. The week is not yet over but I am already thankful for a lot of things. I am really overwhelmed with all the blessings. Really. I couldn’t find the right words on how I could show Him my gratitude for all the blessings that he had showered me upon.

I realized that, knowing that God has a reason and a better plan for everything that happens to us is such a relief and a blessing. Faith in God is the key, all we have to do is trust that He is in control of our life,that we are never alone cause we have someone like Him, Him who loves us truly and unconditionally. ๐Ÿ™‚

Family Weekend ๐Ÿ™‚

Last Saturday, Family tried this restaurant called “Orchard Road”. I’ve been wanting to try this restaurant every time we go to Megamall for a Forever 21 visit. (yes, we only go to Megamall because of Forever 21..I dislike going to SM malls lol ๐Ÿ™‚ Anyway, I got so elated when my parents told us to eat there. My siblings sometimes disapprove when I suggest a restaurant that is new to their palette, but I end up winning anyways :)) Hahaha.

Eating in this restaurant reminded me of my Singapore days! I really loved that country. The cleanliness, efficiency of their transportation system and of course the fact that they have a shopping center on every block! :))

I ordered 3 desserts. Yes, 3! Aaah. I die.

Being a carrot cake lover, I just couldn’t resist not ordering one. I liked their carrot cake, will definitely order it again when I go back ๐Ÿ™‚ Eating this carrot cake reminded me of the insipid Mcdonald’s carrot cake that I ordered in ย Bangkok during our first night there.

Truffle Cake, I swear.. if only I could finish that slice without feeling guilty, I would. But instead I just ate 1/3 of the slice with the most icing in it then gave it to my piggy brother. Hahaha ๐Ÿ™‚

Mango tapioca, it was okay but not something that I would look forward to when going to this place. I am a tapioca fan, but I rather do this at home and be satisfied. ๐Ÿ™‚

Daddy and I shared this bowl of Laksa. It was disappointing actually. I was expecting something close to what I ate in Singapore, but it wasn’t. It lacks flavor. Will not order this again, but will try the Hainanese Chicken next time together with the Bandung ๐Ÿ™‚

Farmers Market Adventure

Enrico and I went to Farmers Market to buy the ingredients for our Compre Practice. It was a fun experience. :)) Famrers market is quite different from our typical dirty wet markets here in Manila. Took those photos using my BB so izz super low reso ๐Ÿ™‚
