Hello, dolls!! 🙂 It’s officially spring, my favorite season!! It’s crazy how the nicer weather comes with spring flu virus. Yup, I caught it! I’ve been sneezing and sniffing since yesterday and boy is it hard to be sick when you are alone. All I really want to do now is to cuddle with my Mom.I always find myself wanting to be snuggled up in bed with her when I’m sick. She is soooo soft and her arms and legs are “pillow like” lol.
So today I am going to make you hungry. My afternoons here in Baltimore are different — no rooftop, no afternoon cooking for the family, just me time usually. In the midst of my crazy fast paced life, I can’t help but be excited for my Dad’s 50th birthday!!! I can already smell home and feel the warmth of being surrounded by my family. Don’t get me wrong, I love it here! I am loving every minute of it and I wouldn’t have my life any other way BUT home is home.
Let me share with you some of the things that I cooked for my family, especially my parents, before I left MNL 🙂

Fact: I love Italian pasta, I love spinach, and I love SHRIMP!
My Dad bought waaaay too much shrimp one time. I’ve already used half of it for 2 dishes – one for the salad above and the other quarter for the Vietnamese spring rolls that I made for my Sister’s birthday .
So this is the third dish, and I still had enough to make another batch of Vietnamese spring rolls the day after for my Mom’s tea party.
This was very light. I left the head on cause it has so much flavor — and cause I love cooking with shrimp head!
This only had one small tomato, it turned orange (?) because of the shrimp heads
..and of course, how can I leave out a healthy ingredient?
Another fact about me, I try to make things healthy! 🙂

Though this one looks like a worm, I am really happy with how the flavors blend together.
I always try to have spinach around – I eat it raw with my salad, with my omelette, or mix it with anything! I love it!
Spinach x sun dried tomato in sunflower oil for my filling. Pretty much everything that I found in our refrigerator. haha
